BMF Mécaform automatic group
The major difference between the BMF Compact / BMF Leader and BMF Mecaform models is the dough piece loader and the shaping system on the weighing divider.
The DAM weigher is equipped with the MF2S (Stress Free Shaping) system to pre-roll the dough pieces instead of pre-rolling them. This is similar to what bakers do when shaping by hand. The elongated shaping of the glutinous network facilitates a good elongation in the shaper while maintaining the cell structure.
The loader-distributor is different from the other models because, due to the elongated shape of the dough pieces, it is necessary to place them gently in the pockets so that they arrive well centred in the shaper.
The Mecaform version is particularly recommended for long baguettes, Tradition baguettes and all breads for which the respect of the cell structure is important.
The closed pressure hopper option allows to divide doughs with a long pointing in the vat, with a good regularity while keeping the honeycomb structure.
The Tradition automatic group is composed of an automatic divider with a dough piece pre-elongation system, the automatic BMF Mécaform balancer and the Amor Tradition horizontal shaper or Tregor Tradition vertical moulder. Output from 1000 to 1500 dough pieces/hour. For dividing dough with a long fermentation in the vat, a dividing machine with a closed pressure hopper allows for greater regularity in the divided weight.
