Leclerc Sapiac Montauban decided to invest in our Leader Page semi-automatic group to improve its efficiency and productivity while maintaining the artisanal bread quality that is dear to them. We recently had the opportunity to speak with the manager of the bakery department and here is what he told us :
“Since installing the Armor moulder and the DIV'X divider, our baking experience has gone to a whole new level. This equipment has allowed us to respond effectively to the strong demand from our customers for Tradition and Florinette baguettes.
We produce around 600 Traditions and 300 Florinettes per day and double that on weekends. Investing in these machines therefore allows us to maintain the pace of production while guaranteeing the good quality of our bread. For this, we also decided to invest in a Page intermediate proofer with manual loading, which allows us to divide our dough pieces manually, thus guaranteeing optimal quality without risk of degassing for the dough. This is a real asset for preserving the authenticity of our breads.”
