Horizontal moulder Armor ABS
The MERAND team had the pleasure of speaking with Jesse Dodson, head baker at New Seasons Market in Portland, Oregon.
Jesse explains: “New Season's Market has 18 stores in the Portland area. Most of our department stores are equipped with bakeries where we produce traditional French breads. In the past, New Seasons Market has always shaped its breads and French baguettes by hand to maintain artisanal quality. To be able to assure larger rates, we had to automate the production while keeping the artisanal quality of our product".
