This machine has been designed for all types of bread : ciabatta, rustic bread, traditional bread and others. Ideal for the production of highly hydrated dough (up to 90% hydration). Dough trays are poured onto the feeding belt. The basic principle of the AquaPan® is the stress-free rolling of the dough as it passes through the multi roller.

Once the dough has been calibrated to your requirements, it is divided into strips using a set of 5 discs. The last operation consists of cutting the strips to the desired length with a guillotine that can make straight or angled cuts. Finally, the dough pieces are picked up and placed manually on the net.
