Have you ever tasted the famous piece of beef at the restaurant Leo Léa / Assiette au Bœuf?

Born in the 1970s around the concept of gourmet bistros, the brand has since seen real success. Today, 9 Plate of Beef / Léo Léa restaurants are open in France. In July 2022, a new Léo Léa franchise opened in Marina Baie des Anges (Villeneuve-Loubet, France).

Due to a huge success, it was decided to invest in a bakery lab and produce bread on site. The choice naturally fell on the Stradivario automatic divider-shaper. It is therefore with Nicolas, Bakery Manager, that we spoke today to ask him his opinion on this machine:

The Stradivario is very quick and easy to use. Once recipes and settings are saved, production is very fast and error-free. We produce around 300 Tradition baguettes and buns per day. The products are consistent and the quality is excellent. What is also very practical is that we can adapt our production to the demand and produce throughout the day, so there are no shortages or unsold bread. In addition, the machine does not take up much space, which is a very important point for small bakeries like ours. We are very satisfied with this machine and recommend it vividly”
