Based in Saint-Jean-de-Sixt, Haute Savoie, the new craft bakery "Laurent, boulanger par nature" celebrated its opening on February 18, 2019. Being located near the ski resorts La Clusaz and Le Grand Bornand, its customers are mainly vacationers and village dwellers. Currently, the bakery produces 100% homemade products without additives. Its range of breads includes baguettes, flutes, special breads, country breads, breads of the day / month,...

Mr BERNARD, the production manager of the bakery, told us :

"The bakery was taken over with the equipment in bad condition. It was therefore necessary to renew the old equipment, and completely re-equip the bakery. Today it is fully equipped to produce all products at the shop. We have redesigned everything in terms of machines and process. Currently we are making our bread on liquid leaven and so we have fermentation chambers, retarder prover chambers, a hearth oven, a manual proofer on which we put the horizontal moulder Armor MERAND.

During our research of the new moulder, the main criterion for us was to keep a good alveolage of the bread. We were looking for a moulder that gives the closest results to manual shaping with bread quality equal to artisanal. We therefore chose the horizontal moulder Armor MERAND. It allows obtaining very good results and in addition it very compact. It is a machine that has already been tested by time, it has already gained its reputation. we are 100% satisfied with this machine and with the quality of the breads we make with it. I highly recommend it to other bakers."
