The company PAINS ET TRADITION founded by JEAN KIRCHER, has been offering its customers since 1998 a very wide range of breads of high quality, 100% natural, without additives, improvers or preservatives. Specialized in frozen pre-cooked products, the company mainly works with restaurants, hotels and supermarkets. Together with the regional market in eastern France, the company exports its products to Belgium, Germany, Luxembourg, Switzerland, Japan, Korea, Qatar and Taiwan, Finland, Norway...

The collaboration between PAINS ET TRADITION and MERAND started in 2007. Currently, the company owns 6 Armor ABS moulders, a Div'X hydraulic divider and a semi-automatic intermediate proofer by MERAND. We had the pleasure of exchanging with the general manager of the company - Nicolas SCHROEDER. This is what he told us:

"In BREADS AND TRADITION, while searching for new production machines, special attention is paid to the regularity of weights of finished product. Today the standards are much stricter; customers are more rigorous and demanding. We are IFC and BRC certified and therefore we must absolutely guarantee the customers the weight and the regularity of the products. In addition to that, the artisanal quality of the products is essential for us. Our breads are made in the old-fashioned way with high hydration, slow kneading, lower 10X yeast levels than modern bakery and natural fermentations at room temperature with flaps every hour to create all the aromas and flavors that characterize our products. And so for us it is very important that the machines correspond to our way of doing things and respect our products. These are reasons why we decided to invest in MERAND’s machines. It is very good equipment and we are very satisfied with the results.

Armor ABS moulders, for example, are known to bakers for their great respect for dough. They do not heat up, do not degas the dough and allow obtaining identical results to manual shaping. Today on both production sites we manufacture between 11 and 13 tons of products. Half of this production goes to the MERAND moulders. And we are really happy with the quality of the finished products".
